Pumpkin Pie Pudding

This quick and easy recipe tastes like dessert but works perfectly as a healthy snack or even breakfast!

Ingredients:

  • 1 cup nonfat plain or vanilla yogurt (Greek yogurt works great for extra protein)
  • 1/3 cup pumpkin puree (canned is fine)
  • 1/2 tsp cinnamon
  • 1/4 tsp vanilla extract
  • 1 to 2 tsp honey or maple syrup (to taste)
  • 2 tbsp chopped walnuts

Directions:

  1. Mix yogurt, pumpkin puree, cinnamon, vanilla, and sweetener together until smooth.
  2. Top with chopped walnuts.
  3. Enjoy immediately or refrigerate for later.

Optional breakfast variation: Stir in 1/4 cup rolled oats and let sit overnight for a pumpkin pie overnight oat situation. So good!
